I'm not sure Crayfish is good for community aquariums. They do try to catch small or slow moving fish and if you have a bigger fish like Oscar then they will become snacks. Years ago I had couple of red Crayfish in a medium size Cichlid tank. I had to remove them when I noticed they are getting obsessed with trying to catch anything that moves around them. Also if you have 2 males in same tank then you are in trouble again. There is a big chance bigger and more dominant male killing the smaller one. Specially if your tank is small and they meet each other quite often while patrolling around the tank.
No need to worry about their food. They eat everything and keep your tank clean from stuff like dead plants or even from dead fish. They readly eat any kind of food you offer but probably prefer Algae Wafers {Check Here}. They love Hikari Tropical Algae Wafers which is perfect for them.
Here's a photo showing how to sex Crayfish. This is probably the best way to get it done. You can ask petshop staff to show them when they catch one from tank. That way you can be sure you have a correct pair to take home.
